February is often the coldest month of the year.
However, the days start to get longer and the first flowers herald the revival of vegetation.

In the vineyard, it's time to:
  • Suspend pruning in case of frost
    At the end of winter, the root system becomes active again and sap flows from the pruning wounds. This sap makes the buds moist and sensitive to frost.
In the cellar, it's time to:
  • Rack
    The wines that are furthest along in their development are racked and put into vat.
  • Filter and bottle
    After racking, the wines are filtered and then bottled.
