"Août fait le moût"
(Weather in August determines the quality of the wine)

Lignification
Shoot growth is complete. Their colour changes from green to brown. They become harder and change into canes. The leaves begin to photosynthesize sugar for the grapes.
Ripening and véraison
The grapes lose their chlorophyll and green colour, growing soft and juicy as well as turning red or yellow according to the variety. This colour change is known as véraison. Sugar levels increase and malic acid decreases. The ripening process is in full swing.
In the vineyard, it's time to:
  • Let nature take its course.
In the cellar, it's time to:
  • Check the condition of empty barrels that have already been used for previous vintages.
  • Order new barrels from François Frères.
  • Clean the vats and winemaking equipment (winepress, destemmer, sorting table, baskets, etc…)
