"On St. Luce's day (December 13th) the days begin to lengthen little by litle"

Each sunny day gives the shoots increased vigour. Although difficult to spot, this uneven activity helps the canes build up their ability to bud, which they will not fully acquire until late March, early April.
In the vineyard, it's time to:
  • Continue preliminary pruning.
  • Burn the cuttings from this preliminary pruning.
In the cellar, it's time to:
  • Stir the white wine lees
  • Top up the barrels
  • Rack the wines that were fined in October, followed by filtering and bottling.
  • Fine the white wines
    Wines from the previous vintage have been barrel-aged for 15 months. In order to stabilise their brilliant appearance, they are fined with casein (a milk protein) powder.
