The holidays are over and it is time to go back to work.
We often forget that September is one of the most beautiful months of the year…
The long-awaited moment has finally arrived: the harvest!

"June determines the quantity, September the quality"
The crop
The grapes become juicy and ripe, rich in sugar and phenolic compounds and less acidic.
In the vineyard, it's time to:
  • Remove the metal clips
    These keep the two guide wires rigid. They are removed to make harvesting easier.
  • Monitor ripeness
    15 to 20 bunches are picked at random and pressed. The juice is analysed for sugar content and total acidity.
  • Harvest
    Pickers and grape carriers are sent out to various plots depending on their degree of ripeness.
In the cellar, it's time to:
  • Rack
    The wines fined in July are transferred into vats.
  • Filter and bottle
    Once in vats, the following wines are filtered and bottled:
    • Chassagne-Montrachet Cuvée L'Estimée (red)
    • Bourgogne Hautes-Côtes de Beaune Clos Bortier (red)
    • Bourgogne Hautes-Côtes de Beaune Sous Éguison (white)
